A CLASSIC CROWD PLEASER:
THE APEROL SPRITZ – BACK BY POPULAR DEMAND
TRADITIONAL WITH A TWIST:
BLACKBERRY THYME SPARKLER
- 120g blackberries + 8 more for garnish
- 230ml Water
- 230g sugar
- 1 bottle of champagne
- 120ml gin
- 4 long sprigs of thyme
- Gold baking sugar for the rim
GINGER BASIL GRAPEFRUIT SPRITZER
- 1 grapefruit; plus additional grapefruit for garnish
- 3 x 350ml cans of ginger soda
- handful of fresh basil
- 60ml basil simple syrup
Put a couple of cubes of ice into 2 glasses and add a 50 ml measure of Aperol to each.
Divide the prosecco between the glasses and then top up with soda, if you like.
Reduce blackberries in a small pan with water and sugar, simmer for 5 minutes, until the blackberries are soft and the simple syrup has turned to a bright pink/redish color. Then drain and allow to cool.
Prepare your champagne glasses.
Add gin and then the blackberry simple syrup to each glass.
Drop two blackberries in each glass.
Fill the rest of the glass with champagne and top with a sprig of thyme in each glass.
Juice one large grapefruit and segment additional grapefruit or garnish if preferred. Fill a pitcher half way with ice.
Pour soda, fresh grapefruit juice and simple syrup. Mix well. Garnish with grapefruit slices and fresh basil.
